A delightful Mediterranean dish featuring flaky baked cod paired with briny olives, sweet cherry tomatoes, and aromatic garlic, perfect for any occasion.


Ingredients

  • 4 Cod Fillets (about 6 ounces each), skinless and boneless
  • 1 cup Kalamata Olives, pitted and halved
  • 1 pint Cherry Tomatoes, halved
  • 1 medium Red Onion, thinly sliced
  • 4 cloves Garlic, minced
  • 2 tablespoons Capers, drained
  • 1/4 cup extra virgin Olive Oil
  • 2 teaspoons Dried Oregano
  • Zest and juice of 1 Fresh Lemon
  • Salt, to taste
  • Freshly ground Black Pepper, to taste
  • 1/4 cup Fresh Parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a 9×13 inch baking dish with olive oil.
  2. Slice the red onion, halve the cherry tomatoes, mince the garlic, pit and halve the olives, and drain the capers.
  3. Spread the sliced red onion at the bottom of the baking dish, then top with halved cherry tomatoes, Kalamata olives, minced garlic, and capers.
  4. Drizzle 2 tablespoons of olive oil over the vegetable mix, sprinkle with dried oregano, salt, and freshly ground black pepper, and toss gently.
  5. Pat the cod fillets dry, season with salt and pepper, and nestle them on top of the vegetable layer.
  6. Drizzle the remaining olive oil over the cod, sprinkle with lemon zest, and bake for 15-20 minutes until fish is opaque and flakes easily.
  7. Once out of the oven, squeeze fresh lemon juice over the dish and garnish with chopped parsley before serving.

Notes

For best results, check the doneness of the cod with a fork. If it appears translucent or firm, return it to the oven for a few more minutes. Covering loosely with aluminum foil during baking can help retain moisture.
