- 1/3 cup olive oil
- 4 garlic cloves, sliced
- 6 sprigs fresh thyme
- 1 1/2 cup baby tomatoes, whole
- 4 haddock fillets (or your choice of cod, sea bass, or tilapia)
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 teaspoon chili flakes (optional)
- 1 cup Mezzetta olives (or another variety)
- 1/4 cup Mezzetta sliced jalapeños
- 2 teaspoons Mezzetta capers, drained
Instructions
- Preheat your oven to 450°F. Place your baking dish with the olive oil inside to heat for 6-8 minutes.
- Season the fish fillets with salt, pepper, and optional chili flakes.
- Remove the heated baking dish from the oven and add the sliced garlic, half of the thyme sprigs, and whole baby tomatoes.
- Lay the fish fillets in the dish, then scatter the Mezzetta olives around them and top with sliced jalapeños and capers.
- Lower the oven’s temperature to 375°F and bake for 15-18 minutes, adjusting the time based on the thickness of your fillets.
- For a beautifully charred look, quickly broil the fish for an additional 2 minutes post-baking.
- Drizzle the flavorful olive oil from the pan over the fish fillets and garnish with the remaining thyme sprigs. Serve immediately and enjoy.
Notes
