  • 1 bell pepper, chopped
  • 1 zucchini, chopped
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the chopped onion and garlic to the skillet, sautéing until softened, about 2-3 minutes.
  3. Introduce the ground beef to the skillet. Cook until browned, breaking it apart with a spatula.
  4. Stir in the chopped bell pepper, zucchini, and halved cherry tomatoes.
  5. Season with dried oregano, basil, salt, and pepper. Stir to combine.
  6. Cook for another 5-7 minutes or until the vegetables are tender.
  7. Garnish with fresh parsley before serving.

Notes
