- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder

- 1 cup basmati rice
- 2 cups chicken broth
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 red onion, thinly sliced
- 1/2 cup Kalamata olives
- 1/2 cup feta cheese, crumbled
- Fresh parsley, chopped (for garnish)
- Lemon wedges (for serving)
Instructions
- Prepare the marinade by whisking together olive oil, lemon juice, dried oregano, garlic powder, salt, and pepper in a medium bowl.
- Add the chicken breasts to the marinade and ensure they are well coated. Cover and refrigerate for at least 30 minutes.
- Cook the basmati rice in a saucepan with chicken broth. Bring to a boil, then reduce heat to simmer and cover until cooked (about 15 minutes).
- Preheat the grill pan to medium-high heat.
- Grill the marinated chicken for 6-7 minutes on each side, or until reaching an internal temperature of 165°F. Allow to rest for 5 minutes before slicing.
- Assemble the bowl by layering basmati rice, sliced grilled chicken, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
- Garnish with fresh parsley and serve with lemon wedges on the side.
