Juicy grilled chicken thighs wrapped in warm pita with fresh toppings and a creamy feta tzatziki sauce.

- 1 lb boneless, skinless chicken thighs
- 3 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp garlic powder
- Salt and pepper to taste
- 4 pitas
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1 small red onion, thinly sliced
- 1 cup plain Greek yogurt
- 1/2 cup crumbled feta cheese
- 2 tbsp lemon juice
- 1 clove garlic, minced
Instructions
- In a bowl, combine olive oil, oregano, garlic powder, salt, and pepper to create the marinade.
- Coat the chicken thighs in the marinade and marinate for at least 30 minutes.
- Heat a skillet over medium-high heat and add the marinated chicken.
- Cook the chicken for 5-7 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F).
- While the chicken cooks, in a separate bowl, mix together Greek yogurt, feta, lemon juice, and minced garlic to make the tzatziki sauce.
- Once the chicken is cooked, let it rest for a few minutes before slicing into strips.
- To assemble the gyros, spread tzatziki on each pita and top with sliced chicken, cherry tomatoes, cucumbers, and red onion.
- Serve immediately and enjoy your Mediterranean chicken gyros!
Notes
For enhanced flavor, marinate the chicken longer if possible. Experiment with spices for the marinade and toppings for variety.
