- 2 cups cooked and diced chicken breast
- 8 ounces penne or rotini pasta
- 1 cup halved cherry tomatoes
- 1 medium cucumber, diced
- 1/4 cup finely chopped red onion
- 1 cup feta cheese crumbles
- 1/2 cup pitted kalamata olives
- 3 tablespoons extra virgin olive oil
Instructions
- Heat a skillet over medium heat and cook the seasoned chicken in olive oil until golden brown and fully cooked. Allow resting before chopping into bite-sized pieces.
- In a separate pot, bring salted water to a boil and cook the penne or rotini pasta according to package instructions. Drain the pasta without rinsing.
- While the pasta cooks, chop the cucumber and prepare the cherry tomatoes and red onion.
- In a large bowl, combine the pasta, diced chicken, cherry tomatoes, cucumber, red onion, feta cheese, and kalamata olives.
- Drizzle with olive oil, toss gently, and adjust seasoning as necessary.
- Let the salad chill before serving for improved flavor.
Notes
