Ingredients

  • 2 cups cooked and diced chicken breast
  • 8 ounces penne or rotini pasta
  • 1 cup halved cherry tomatoes
  • 1 medium cucumber, diced
  • 1/4 cup finely chopped red onion
  • 1 cup feta cheese crumbles
  • 1/2 cup pitted kalamata olives
  • 3 tablespoons extra virgin olive oil

Instructions

  1. Heat a skillet over medium heat and cook the seasoned chicken in olive oil until golden brown and fully cooked. Allow resting before chopping into bite-sized pieces.
  2. In a separate pot, bring salted water to a boil and cook the penne or rotini pasta according to package instructions. Drain the pasta without rinsing.
  3. While the pasta cooks, chop the cucumber and prepare the cherry tomatoes and red onion.
  4. In a large bowl, combine the pasta, diced chicken, cherry tomatoes, cucumber, red onion, feta cheese, and kalamata olives.
  5. Drizzle with olive oil, toss gently, and adjust seasoning as necessary.
  6. Let the salad chill before serving for improved flavor.
