Ingredients

  • 1 cup cooked chicken breast, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup kalamata olives, pitted and sliced
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste
  • Fresh herbs (basil, parsley, or oregano) for garnish

Instructions

  1. Cook chicken in extra virgin olive oil until golden brown, then let rest and dice.
  2. Boil pasta according to package instructions and drain without rinsing.
  3. In a large bowl, combine cooked pasta, chicken, tomatoes, cucumber, feta, and olives.
  4. Drizzle olive oil and lemon juice over the mixture, then gently toss to combine.
  5. Season with salt and pepper, adjusting to taste.
