- 1.5 pounds chicken breast, cut into bite-sized pieces
- 3 cups fresh spinach
- 1.5 cups cherry tomatoes, halved
- 1 large red bell pepper, diced
- 1 medium yellow squash, sliced
- 4 garlic cloves, minced
- 3 tablespoons olive oil
- 1 teaspoon dried oregano
- 0.5 teaspoon red pepper flakes
- Zest of 1 lemon
- Salt and black pepper to taste
Instructions
- Pat the chicken breast pieces dry with paper towels, then season with salt, black pepper, and half of the dried oregano.
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the seasoned chicken pieces and sear for 5-6 minutes until golden brown. Remove and let rest.
- Add the remaining olive oil and sauté minced garlic for about 30 seconds until fragrant.
- Incorporate the diced bell pepper and sliced yellow squash, cooking for 4-5 minutes until softened.
- Stir in the halved cherry tomatoes, cooking until they release their juices, about 2 minutes.
- Return the chicken to the skillet, add fresh spinach along with the remaining oregano and red pepper flakes. Toss together and cook for an additional 2-3 minutes until spinach wilts.
- Remove from heat and zest a lemon over the stir fry. Adjust seasonings to taste, and serve immediately.
