  • 2 minced garlic cloves
  • 1/2 cup chicken broth

  • Salt to taste
  • Pepper to taste
  • Optional: Fresh parsley for garnish

Instructions

  1. Trim excess fat from chicken breasts and season generously with salt and pepper.
  2. Chop sun-dried tomatoes and artichoke hearts, and mince garlic.
  3. Heat olive oil in a skillet over medium heat.
  4. Place seasoned chicken breasts in the skillet and sear for 5-7 minutes on each side until golden brown.
  5. Remove chicken from skillet and let it rest.
  6. Add minced garlic to the skillet and sauté for about 1 minute.
  7. Toss in sun-dried tomatoes, artichoke hearts, and capers; stir for 1 minute.
  8. Pour in chicken broth and scrape any brown bits from the skillet.
  9. Return chicken to the skillet and let simmer for 10-15 minutes until cooked through.
  10. Serve garnished with fresh parsley and with rice, couscous, or salad.
