- 2 minced garlic cloves

Instructions
- Trim excess fat from chicken breasts and season generously with salt and pepper.
- Chop sun-dried tomatoes and artichoke hearts, and mince garlic.
- Heat olive oil in a skillet over medium heat.
- Place seasoned chicken breasts in the skillet and sear for 5-7 minutes on each side until golden brown.
- Remove chicken from skillet and let it rest.
- Add minced garlic to the skillet and sauté for about 1 minute.
- Toss in sun-dried tomatoes, artichoke hearts, and capers; stir for 1 minute.
- Pour in chicken broth and scrape any brown bits from the skillet.
- Return chicken to the skillet and let simmer for 10-15 minutes until cooked through.
- Serve garnished with fresh parsley and with rice, couscous, or salad.
Notes
For sauce consistency, adjust with chicken broth as needed. Optional ingredients like olives or feta can enhance flavor.
