Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 3/4 cup warm water
  • 2 tablespoons olive oil
  • 1 cup cherry tomatoes, halved
  • 1/2 cup kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Combine warm water, yeast, and sugar in a bowl. Let it sit for about 5 minutes until foamy.
  2. In a large bowl, mix the flour and salt. Add the foamy yeast mixture and olive oil, stir until it forms a dough.
  3. Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.
  4. Place the dough in an oiled bowl, cover with a cloth, and let it rise for one hour.
  5. Preheat the oven to 475°F (245°C) during the last few minutes of rising.
  6. Roll out the dough into a rectangular shape and transfer it to a parchment-lined baking sheet.
  7. Add cherry tomatoes, kalamata olives, feta cheese, parsley, and oregano on top, drizzling with olive oil. Season with salt and pepper.
  8. Bake for 12-15 minutes until golden and crispy.
  9. Serve warm and enjoy!
