Ingredients

  • 2 pounds small potatoes (baby potatoes)

  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/4 cup chopped red onion
  • 1/2 cup diced cucumber
  • 1/2 cup halved cherry tomatoes
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Boil the small potatoes in salted water until tender (15-20 minutes). Drain and let cool.
  2. In a large bowl, whisk together olive oil, red wine vinegar, Dijon mustard, garlic powder, salt, and pepper to create the dressing.
  3. Once cooled, cut the potatoes into halves or quarters and add to the bowl with the dressing.
  4. Stir in red onion, cucumber, cherry tomatoes, Kalamata olives, feta cheese, and parsley.
  5. Gently toss to combine and serve chilled or at room temperature.

Notes
