Ingredients

- 2 pounds small potatoes (baby potatoes)
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon Dijon mustard
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1/4 cup chopped red onion
- 1/2 cup diced cucumber
- 1/2 cup halved cherry tomatoes
- 1/4 cup Kalamata olives, pitted and sliced
- 1/4 cup feta cheese, crumbled
- 2 tablespoons chopped fresh parsley
Instructions
- Boil the small potatoes in salted water until tender (15-20 minutes). Drain and let cool.
- In a large bowl, whisk together olive oil, red wine vinegar, Dijon mustard, garlic powder, salt, and pepper to create the dressing.
- Once cooled, cut the potatoes into halves or quarters and add to the bowl with the dressing.
- Stir in red onion, cucumber, cherry tomatoes, Kalamata olives, feta cheese, and parsley.
- Gently toss to combine and serve chilled or at room temperature.
Notes
For enhanced flavor, allow the salad to marinate for 30 minutes before serving. Use high-quality olive oil and fresh seasonal vegetables for the best results.
