- 1 can artichoke hearts, drained and chopped
- 1 cup olives, sliced
- 1 can fire-roasted tomatoes
- 4 cups vegetable broth
- 1 cup spinach or other leafy greens
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
- Parmesan cheese for serving (optional)
Instructions
- Combine the pasta, artichokes, olives, tomatoes, vegetable broth, garlic, oregano, and basil in a large pot.
- Bring the mixture to a boil over medium-high heat.
- Once boiling, reduce the heat and let it simmer for about 10-12 minutes or until the pasta reaches the desired tenderness.
- Add the spinach in the last few minutes of cooking.
- Season with salt and pepper to taste, then serve hot with Parmesan cheese if desired.
