Description

Ingredients

  • 8 oz pasta (your choice)
  • 1 can artichoke hearts, drained and chopped
  • 1 cup olives, sliced
  • 1 can fire-roasted tomatoes
  • 4 cups vegetable broth
  • 1 cup spinach or other leafy greens
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)

Instructions

  1. Combine the pasta, artichokes, olives, tomatoes, vegetable broth, garlic, oregano, and basil in a large pot.
  2. Bring the mixture to a boil over medium-high heat.
  3. Once boiling, reduce the heat and let it simmer for about 10-12 minutes or until the pasta reaches the desired tenderness.
  4. Add the spinach in the last few minutes of cooking.
  5. Season with salt and pepper to taste, then serve hot with Parmesan cheese if desired.
