- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 zucchini, sliced
- 1 cup cherry tomatoes, halved
- 12 ounces fusilli or penne pasta
- 4 cups vegetable broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- Lemon juice (for serving)
Instructions
- Heat olive oil in a large pot over medium heat. Sauté chopped onion and minced garlic until softened.
- Add diced bell pepper, sliced zucchini, and halved cherry tomatoes. Cook for about 5 minutes until slightly caramelized.
- Stir in pasta, vegetable broth, oregano, basil, salt, and pepper. Bring to a boil.
- Reduce heat to simmer and cook for 12-15 minutes until pasta is al dente, stirring occasionally.
- Adjust liquid as needed by adding more broth if it gets too dry.
- Serve hot, garnished with fresh parsley and a splash of lemon juice.
