Ingredients

  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 12 ounces fusilli or penne pasta
  • 4 cups vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Lemon juice (for serving)

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onion and minced garlic until softened.
  2. Add diced bell pepper, sliced zucchini, and halved cherry tomatoes. Cook for about 5 minutes until slightly caramelized.
  3. Stir in pasta, vegetable broth, oregano, basil, salt, and pepper. Bring to a boil.
  4. Reduce heat to simmer and cook for 12-15 minutes until pasta is al dente, stirring occasionally.
  5. Adjust liquid as needed by adding more broth if it gets too dry.
  6. Serve hot, garnished with fresh parsley and a splash of lemon juice.
