Description

A refreshing salad made with tender orzo pasta, crunchy cucumber, sweet cherry tomatoes, and creamy feta, perfect for any occasion.


Ingredients

  • 1 cup orzo pasta
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the orzo pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine the diced cucumber, cherry tomatoes, red onion, parsley, and feta cheese.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper to create the vinaigrette.
  4. Add the cooled orzo to the salad mixture and pour the vinaigrette over the top. Toss to combine.
  5. Serve chilled or at room temperature.

Notes

Allow the salad to rest for 15 minutes before serving to enhance flavor. Store leftovers in an airtight container in the refrigerator for up to three days.
