A refreshing and vibrant salad combining orzo pasta, fresh vegetables, and crumbled feta cheese, perfect for summer gatherings or holiday events.


Ingredients

  • 1 cup orzo pasta
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup kalamata olives, pitted and sliced
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • Salt and pepper to taste

Instructions

  1. Cook the orzo pasta according to package instructions. Once al dente, drain and let cool.
  2. In a large bowl, combine cherry tomatoes, cucumber, red onion, feta, kalamata olives, and parsley.
  3. Once the orzo has cooled, add it to the mixing bowl.
  4. In a separate bowl, whisk together olive oil, red wine vinegar, salt, and pepper.
  5. Drizzle the dressing over the salad and toss gently to combine.
  6. Serve the salad chilled or at room temperature.

Notes

Add a sprinkle of lemon juice for extra zing. Let the salad sit for 15 minutes before serving for improved flavor.
