Ingredients

- 1 cup orzo pasta
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, finely chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup kalamata olives, pitted and sliced
- 1/4 cup fresh parsley, chopped
- 3 tablespoons olive oil
- 2 tablespoons red wine vinegar
- Salt and pepper to taste
Instructions
- Cook the orzo pasta according to package instructions. Once al dente, drain and let cool.
- In a large bowl, combine cherry tomatoes, cucumber, red onion, feta, kalamata olives, and parsley.
- Once the orzo has cooled, add it to the mixing bowl.
- In a separate bowl, whisk together olive oil, red wine vinegar, salt, and pepper.
- Drizzle the dressing over the salad and toss gently to combine.
- Serve the salad chilled or at room temperature.
Notes
Add a sprinkle of lemon juice for extra zing. Let the salad sit for 15 minutes before serving for improved flavor.
