- 8 oz pasta
- 1 cup cherry tomatoes, halved
- 1/2 cup olives, pitted and sliced
- 1 cup feta cheese, crumbled
- 1 cucumber, diced
- 1/4 cup olive oil
- 2 tbsp lemon juice
- 2 cloves garlic, minced
- 1 tsp dried oregano
- Salt, to taste
- Pepper, to taste
Instructions
- Cook the pasta according to package instructions and drain.
- In a large bowl, combine the cooked pasta, cherry tomatoes, olives, feta cheese, and cucumbers.
- In a separate bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper to make the dressing.
- Pour the dressing over the pasta salad and toss to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
For best flavor, make the salad a few hours ahead of serving. Store extra dressing separately to maintain crunchiness.
