  • 2 cups rotini pasta
  • 1 cup cherry tomatoes, halved

  • 1/2 cup red bell pepper, diced
  • 1/4 cup black olives, sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup fresh herbs (like parsley or basil), chopped
  • 1/2 cup olive oil
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta in a large pot of salted boiling water according to package instructions. Drain and rinse under cold water to cool.
  2. In a large mixing bowl, combine cherry tomatoes, cucumber, red bell pepper, black olives, and feta cheese.
  3. In a separate bowl, whisk together olive oil, lemon juice, minced garlic, salt, and pepper.
  4. Add the cooled pasta to the bowl with chopped vegetables and pour dressing over the mixture.
  5. Toss gently to ensure everything is well-coated.
  6. Fold in fresh herbs for added flavor.
  7. Chill in the refrigerator for at least 30 minutes before serving to meld the flavors.
