Description

A vibrant Mediterranean potato salad featuring tender potatoes, cherry tomatoes, olives, and a tangy olive oil dressing.


Ingredients

  • 2 lbs waxy potatoes, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup pitted olives, sliced
  • 1/2 red onion, finely diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 3 tbsp olive oil
  • 2 tbsp red wine vinegar
  • Salt to taste
  • Pepper to taste

Instructions

  1. Boil the potatoes in salted water for about 15 minutes until tender but not mushy.
  2. Drain the potatoes and let them cool to absorb the dressing better.
  3. Prepare other ingredients: halve cherry tomatoes, slice olives, dice red onion, and chop parsley and basil.
  4. In a large mixing bowl, toss the cooled potatoes, cherry tomatoes, olives, and red onion together.
  5. In a separate bowl, whisk together olive oil, red wine vinegar, salt, and pepper.
  6. Pour the dressing over the salad and gently toss everything together without mashing the potatoes.
  7. Taste and adjust seasoning if needed before serving.

Notes

Season potatoes while warm for the best flavor absorption. Add roasted garlic for extra depth and taste your salad before serving.
