Ingredients

- 2 lbs waxy potatoes, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup pitted olives, sliced
- 1/2 red onion, finely diced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh basil, chopped
- 3 tbsp olive oil
- 2 tbsp red wine vinegar
- Salt to taste
- Pepper to taste
Instructions
- Boil the potatoes in salted water for about 15 minutes until tender but not mushy.
- Drain the potatoes and let them cool to absorb the dressing better.
- Prepare other ingredients: halve cherry tomatoes, slice olives, dice red onion, and chop parsley and basil.
- In a large mixing bowl, toss the cooled potatoes, cherry tomatoes, olives, and red onion together.
- In a separate bowl, whisk together olive oil, red wine vinegar, salt, and pepper.
- Pour the dressing over the salad and gently toss everything together without mashing the potatoes.
- Taste and adjust seasoning if needed before serving.
Notes
Season potatoes while warm for the best flavor absorption. Add roasted garlic for extra depth and taste your salad before serving.
