Ingredients

  • 4 whole-wheat tortillas
  • 1 cup crumbled feta cheese
  • 1/2 cup sliced black olives
  • 1 cup fresh spinach leaves
  • 1 small red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup sun-dried tomatoes, chopped
  • 1 tablespoon olive oil
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a skillet over medium heat. Add sliced red onion and sauté until translucent.
  2. Stir in fresh spinach and cook until wilted, then remove from heat.
  3. Spread the spinach and onion mixture over half of a tortilla.
  4. Top with crumbled feta, sliced olives, cherry tomatoes, and sun-dried tomatoes. Season with oregano, salt, and pepper.
  5. Fold the tortilla in half to cover the filling.
  6. Cook on the skillet for about three minutes per side until golden brown.
  7. Repeat with remaining tortillas and fillings.
  8. Cut into wedges and serve warm.
