- 4 whole-wheat tortillas
- 1 cup crumbled feta cheese
- 1/2 cup sliced black olives
- 1 cup fresh spinach leaves
- 1 small red onion, thinly sliced
- 1 cup cherry tomatoes, halved
- 1/4 cup sun-dried tomatoes, chopped
- 1 tablespoon olive oil
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Heat the olive oil in a skillet over medium heat. Add sliced red onion and sauté until translucent.
- Stir in fresh spinach and cook until wilted, then remove from heat.
- Spread the spinach and onion mixture over half of a tortilla.
- Top with crumbled feta, sliced olives, cherry tomatoes, and sun-dried tomatoes. Season with oregano, salt, and pepper.
- Fold the tortilla in half to cover the filling.
- Cook on the skillet for about three minutes per side until golden brown.
- Repeat with remaining tortillas and fillings.
- Cut into wedges and serve warm.
