Description

Delightful Mediterranean quesadillas filled with fresh spinach, tangy feta, and gooey mozzarella, perfect for lunch or dinner.


Ingredients

  • 4 flour tortillas
  • 1 cup fresh spinach (chopped)
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 small tomato (diced)
  • 1/4 cup red onion (thinly sliced)
  • 1 tablespoon olive oil
  • Black pepper (to taste)

Instructions

  1. In a mixing bowl, combine mozzarella cheese, feta cheese, spinach, diced tomato, red onion, and black pepper. Mix well until evenly coated.
  2. Lay one tortilla flat and place one-fourth of the filling mixture on half of the tortilla. Fold it over to cover the filling.
  3. Heat a non-stick skillet over medium heat and add olive oil.
  4. Place the filled tortilla in the skillet and cook for about 3-4 minutes until golden brown. Flip carefully and cook for another 3-4 minutes until both sides are crispy.
  5. Remove from heat, slice into wedges, and serve warm.

Notes

For extra crispy quesadillas, gently press down with a spatula while cooking. Store leftovers in an airtight container in the refrigerator for up to 3 days.
