Delightful quesadillas filled with mozzarella, feta, fresh vegetables, and Mediterranean flavors.

- 4 large flour tortillas
- 1 cup shredded mozzarella cheese
- 1 cup crumbled feta cheese
- 1 cup baby spinach, chopped
- ½ cup sun-dried tomatoes, chopped
- ½ cup pitted Kalamata olives, sliced
- 1 bell pepper, thinly sliced (red or yellow)
- ½ teaspoon dried oregano
- ½ teaspoon garlic powder
- Olive oil, for cooking
- Fresh basil or parsley, for garnish (optional)
Instructions
- Chop the spinach, sun-dried tomatoes, olives, and bell pepper. Set aside.
- In a large mixing bowl, combine the mozzarella cheese, feta cheese, chopped spinach, sun-dried tomatoes, olives, bell pepper, oregano, and garlic powder. Mix well.
- In a large skillet, heat a small amount of olive oil over medium heat.
- Place one tortilla in the skillet. Spoon a generous amount of the filling onto one half of the tortilla, leaving space around the edges.
- Fold the tortilla over to cover the filling. Cook for about 3-4 minutes or until the bottom side is golden brown and the cheese begins to melt.
- Carefully flip the quesadilla using a spatula. Cook the other side for another 3-4 minutes until golden brown and crispy.
- Remove the cooked quesadilla from the skillet and place it on a cutting board. Repeat the process with the remaining tortillas and filling.
- Cut each quesadilla into wedges and arrange them on a serving platter. Garnish with fresh basil or parsley if desired.
Notes
Serve warm with optional dips like tzatziki or guacamole. Store leftovers in an airtight container for up to three days.
