A vibrant and nutritious Mediterranean quinoa bowl packed with flavor from chickpeas, fresh vegetables, and feta cheese.
Ingredients

- 1 cup quinoa
- 2 cups water
- 1 can chickpeas, drained and rinsed
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 1 small red onion, diced
- 1/2 cup kalamata olives, sliced
- 2 cups fresh spinach, washed
- 1/2 cup crumbled feta cheese
- Juice of 1 lemon
- Tzatziki sauce, for serving
Instructions
- Rinse quinoa under cool water and bring 2 cups of water to a boil. Add quinoa, reduce heat, cover, and simmer for about 15 minutes until water is absorbed. Fluff with a fork and cool.
- Preheat oven to 400°F (200°C). Spread chickpeas on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for about 20 minutes, stirring halfway through.
- Dice red onion and slice kalamata olives. Wash fresh spinach.
- In a large bowl, combine quinoa, roasted chickpeas, spinach, onion, and olives.
- Add crumbled feta cheese and lemon juice, and gently toss to mix.
- Serve with a dollop of tzatziki sauce on top.
Notes
Adjust seasoning to taste and feel free to customize with additional herbs or vegetables.
