Description

A vibrant and nutritious Mediterranean quinoa bowl packed with flavor from chickpeas, fresh vegetables, and feta cheese.


Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 can chickpeas, drained and rinsed
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 small red onion, diced
  • 1/2 cup kalamata olives, sliced
  • 2 cups fresh spinach, washed
  • 1/2 cup crumbled feta cheese
  • Juice of 1 lemon
  • Tzatziki sauce, for serving

Instructions

  1. Rinse quinoa under cool water and bring 2 cups of water to a boil. Add quinoa, reduce heat, cover, and simmer for about 15 minutes until water is absorbed. Fluff with a fork and cool.
  2. Preheat oven to 400°F (200°C). Spread chickpeas on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for about 20 minutes, stirring halfway through.
  3. Dice red onion and slice kalamata olives. Wash fresh spinach.
  4. In a large bowl, combine quinoa, roasted chickpeas, spinach, onion, and olives.
  5. Add crumbled feta cheese and lemon juice, and gently toss to mix.
  6. Serve with a dollop of tzatziki sauce on top.

Notes

Adjust seasoning to taste and feel free to customize with additional herbs or vegetables.
