Description

A vibrant and nutritious salad featuring quinoa, fresh vegetables, olives, and feta cheese, perfect for warm-weather gatherings or a light meal.


Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup olives, sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup red onion, diced
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and water, bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes. Fluff with a fork after cooking.
  4. In a large bowl, combine diced cucumber, cherry tomatoes, olives, feta cheese, and red onion.
  5. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  6. Add the cooked quinoa to the vegetable mixture and pour the dressing over it. Toss to combine.
  7. Garnish with fresh parsley and serve.

Notes

For enhanced flavor, chill the salad in the refrigerator for at least 30 minutes before serving. Fresh herbs can be added for extra flavor.
