Description

A vibrant and flavorful dish featuring roasted zucchini, bell peppers, cherry tomatoes, and more, infused with herbs and olive oil.


Ingredients

  • 1 medium zucchini, sliced
  • 1 medium yellow squash, sliced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 red onion, chopped
  • 1 cup cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and black pepper, to taste
  • 1/4 cup feta cheese, crumbled (optional)
  • Fresh parsley or basil, chopped (for garnish)

Instructions

  1. Preheat the oven to 425°F (220°C) and prepare a baking sheet by lining it with parchment paper.
  2. In a large mixing bowl, combine the sliced zucchini, yellow squash, chopped bell peppers, red onion, halved cherry tomatoes, and minced garlic.
  3. Drizzle with olive oil and sprinkle with oregano, thyme, paprika, salt, and black pepper. Toss gently to coat.
  4. Spread the seasoned vegetables in a single layer on the prepared baking sheet.
  5. Roast the vegetables in the preheated oven for 25-30 minutes, stirring halfway through.
  6. If desired, sprinkle crumbled feta cheese on top during the last 5 minutes of roasting.
  7. Once done, let cool slightly and garnish with fresh parsley or basil before serving.

Notes

For a hint of spice, consider adding crushed red pepper flakes or a drizzle of balsamic vinegar prior to serving.
