- 1 medium zucchini, sliced
- 1 medium yellow squash, sliced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 red onion, chopped
- 1 cup cherry tomatoes, halved
- 3 cloves garlic, minced
- 3 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and black pepper, to taste
- 1/4 cup feta cheese, crumbled (optional)
- Fresh parsley or basil, chopped (for garnish)
Instructions
- Preheat the oven to 425°F (220°C) and prepare a baking sheet by lining it with parchment paper.
- In a large mixing bowl, combine the sliced zucchini, yellow squash, chopped bell peppers, red onion, halved cherry tomatoes, and minced garlic.
- Drizzle with olive oil and sprinkle with oregano, thyme, paprika, salt, and black pepper. Toss gently to coat.
- Spread the seasoned vegetables in a single layer on the prepared baking sheet.
- Roast the vegetables in the preheated oven for 25-30 minutes, stirring halfway through.
- If desired, sprinkle crumbled feta cheese on top during the last 5 minutes of roasting.
- Once done, let cool slightly and garnish with fresh parsley or basil before serving.
Notes
For a hint of spice, consider adding crushed red pepper flakes or a drizzle of balsamic vinegar prior to serving.
