  • 1 ½ pounds large, peeled shrimp
  • 1 bunch fresh asparagus
  • 1 whole red onion
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • Sea salt to taste
  • Freshly ground black pepper to taste
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • Juice of 1 whole lemon
  • Feta cheese for garnish
  • Black olives for garnish
  • Fresh cilantro or parsley for garnish

Instructions

  1. Preheat the oven to 450°F.
  2. In a large bowl, season the shrimp with 2 tablespoons of olive oil, minced garlic, sea salt, black pepper, smoked paprika, dried oregano, and lemon juice; toss to coat.
  3. Trim and wash the asparagus, then lay it flat on a baking sheet and drizzle with 1 tablespoon of olive oil.
  4. Place the seasoned shrimp on top of the asparagus and scatter sliced red onions over everything.
  5. Bake in the preheated oven for about 10 minutes, watching closely to avoid overcooking.
  6. Once done, garnish with feta cheese, black olives, and fresh herbs before serving.

Notes

For extra flavor, marinate the shrimp for at least 30 minutes before cooking. Pair with a light grain like quinoa or a fresh salad.
