- 1 ½ pounds large, peeled shrimp
- 1 bunch fresh asparagus
- 1 whole red onion
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- Sea salt to taste
- Freshly ground black pepper to taste
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- Juice of 1 whole lemon
- Feta cheese for garnish
- Black olives for garnish
- Fresh cilantro or parsley for garnish
Instructions
- Preheat the oven to 450°F.
- In a large bowl, season the shrimp with 2 tablespoons of olive oil, minced garlic, sea salt, black pepper, smoked paprika, dried oregano, and lemon juice; toss to coat.
- Trim and wash the asparagus, then lay it flat on a baking sheet and drizzle with 1 tablespoon of olive oil.
- Place the seasoned shrimp on top of the asparagus and scatter sliced red onions over everything.
- Bake in the preheated oven for about 10 minutes, watching closely to avoid overcooking.
- Once done, garnish with feta cheese, black olives, and fresh herbs before serving.
Notes
For extra flavor, marinate the shrimp for at least 30 minutes before cooking. Pair with a light grain like quinoa or a fresh salad.
