- 1 lb sirloin steak (about 1-inch thick)
- 3 tbsp olive oil (for the marinade)
- 2 garlic cloves (minced, for the marinade)
- 1 tbsp lemon juice (fresh, for the marinade)
- 1 tsp dried oregano (for the marinade)
- 1 tsp dried thyme (for the marinade)
- ½ tsp salt (for the marinade)
- ¼ tsp black pepper (for the marinade)
- 2 cups cooked grains (brown rice, quinoa, or cauliflower rice)
- 1 cup roasted chickpeas (optional for paleo or keto)
- 1 cup cherry tomatoes (halved)
- 1 cucumber (diced)
- ½ red onion (thinly sliced)
- ½ cup kalamata olives (pitted)
- ⅓ cup feta cheese (crumbled; optional for dairy-free)
- 1 cup Greek yogurt (plain; coconut yogurt for dairy-free)
- ½ cucumber (grated, squeezed dry)
- 1 tbsp lemon juice (fresh, for tzatziki)
- 1 garlic clove (minced, for tzatziki)
- 1 tbsp fresh dill (chopped, for tzatziki)
- Salt & pepper (to taste, for tzatziki)
- 3 tbsp olive oil (for the vinaigrette)
- 2 tbsp lemon juice (fresh, for the vinaigrette)
- 1 tsp honey (omit for Whole30)
- 1 garlic clove (minced, for vinaigrette)
- ½ tsp dried oregano (for the vinaigrette)
- Salt & pepper (to taste, for vinaigrette)
Instructions
- Begin by mixing the marinade ingredients in a bowl. Coat the sirloin steak thoroughly and allow it to marinate for at least 30 minutes but ideally up to 4 hours.
- For the tzatziki, combine the yogurt, grated cucumber, chopped dill, lemon juice, and minced garlic in a separate bowl. Add salt and pepper to taste. Chill while the steak marinates.
- Prepare the vinaigrette by whisking together olive oil, fresh lemon juice, honey, minced garlic, dried oregano, salt, and pepper in another bowl.
- Heat a skillet over high heat. Sear the marinated steak for 4 to 5 minutes on each side for a perfect medium-rare.
- Once cooked, let it rest for a few minutes before slicing it thinly.
- Layer the cooked grains in a bowl, add the sliced steak, and top with your fresh toppings: roasted chickpeas, cherry tomatoes, diced cucumber, red onion, kalamata olives, and feta cheese if desired.
- Drizzle with tzatziki and vinaigrette before serving.
