  • 3 tbsp olive oil (for the marinade)
  • 2 garlic cloves (minced, for the marinade)
  • 1 tbsp lemon juice (fresh, for the marinade)
  • 1 tsp dried oregano (for the marinade)
  • 1 tsp dried thyme (for the marinade)
  • ½ tsp salt (for the marinade)
  • ¼ tsp black pepper (for the marinade)
  • 2 cups cooked grains (brown rice, quinoa, or cauliflower rice)
  • 1 cup roasted chickpeas (optional for paleo or keto)
  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (diced)
  • ½ red onion (thinly sliced)
  • ½ cup kalamata olives (pitted)
  • ⅓ cup feta cheese (crumbled; optional for dairy-free)
  • 1 cup Greek yogurt (plain; coconut yogurt for dairy-free)
  • ½ cucumber (grated, squeezed dry)
  • 1 tbsp lemon juice (fresh, for tzatziki)
  • 1 garlic clove (minced, for tzatziki)
  • 1 tbsp fresh dill (chopped, for tzatziki)
  • Salt & pepper (to taste, for tzatziki)
  • 3 tbsp olive oil (for the vinaigrette)
  • 2 tbsp lemon juice (fresh, for the vinaigrette)
  • 1 tsp honey (omit for Whole30)
  • 1 garlic clove (minced, for vinaigrette)
  • ½ tsp dried oregano (for the vinaigrette)
  • Salt & pepper (to taste, for vinaigrette)

Instructions

  1. Begin by mixing the marinade ingredients in a bowl. Coat the sirloin steak thoroughly and allow it to marinate for at least 30 minutes but ideally up to 4 hours.
  2. For the tzatziki, combine the yogurt, grated cucumber, chopped dill, lemon juice, and minced garlic in a separate bowl. Add salt and pepper to taste. Chill while the steak marinates.
  3. Prepare the vinaigrette by whisking together olive oil, fresh lemon juice, honey, minced garlic, dried oregano, salt, and pepper in another bowl.
  4. Heat a skillet over high heat. Sear the marinated steak for 4 to 5 minutes on each side for a perfect medium-rare.
  5. Once cooked, let it rest for a few minutes before slicing it thinly.
  6. Layer the cooked grains in a bowl, add the sliced steak, and top with your fresh toppings: roasted chickpeas, cherry tomatoes, diced cucumber, red onion, kalamata olives, and feta cheese if desired.
  7. Drizzle with tzatziki and vinaigrette before serving.
