Description
A vibrant Mediterranean twist on classic white chicken chili, featuring tender chicken, creamy white beans, artichokes, olives, and bright lemony herbs.
Ingredients
2 pounds boneless, skinless chicken breasts, cubed
3 tablespoons extra virgin olive oil
1 large yellow onion, diced
4 garlic cloves, minced
2 teaspoons dried oregano
1 tablespoon ground cumin
1 teaspoon ground coriander
1 teaspoon smoked paprika
½ teaspoon cinnamon
2 cans (15 oz each) white beans, drained and rinsed
4 cups low-sodium chicken broth
1 cup roasted red peppers, chopped
1 cup artichoke hearts, quartered
Zest and juice of 2 lemons
½ cup kalamata olives, pitted and sliced
¼ cup fresh dill, chopped
¼ cup fresh parsley, chopped
1 cup crumbled feta cheese
Salt and freshly ground black pepper to taste
Instructions
1. Heat olive oil in a large Dutch oven over medium heat. Add diced onion and sauté for 4-5 minutes until translucent. Add garlic and cook 30 seconds.
2. Add cubed chicken to the pot. Season with salt, pepper, oregano, cumin, coriander, smoked paprika, and cinnamon. Brown for 5-7 minutes.
3. Pour in chicken broth and bring to a simmer. Add white beans, roasted red peppers, and artichoke hearts. Simmer uncovered for 25 minutes.
4. Stir in lemon zest, lemon juice, and kalamata olives. Simmer 5 more minutes.
5. Remove from heat and stir in fresh dill and parsley. Let stand 5 minutes before serving. Top with feta cheese.
Notes
Don’t skip the lemon juice and zest — they bring the Mediterranean brightness.
Add feta just before serving to keep the texture.
For a vegetarian version, replace chicken with mushrooms and zucchini.
This chili tastes even better the next day as flavors meld.
