Instructions
- To prepare the herbed yogurt dip, finely chop a clove of garlic and place it in a mortar.
- Use a pestle to crush the garlic into a smooth paste, then incorporate the Greek yogurt, seasoning it generously with sea salt, ground black pepper, and the juice of one lemon, stirring until well blended.
- Gradually drizzle in a tablespoon of extra virgin Spanish olive oil, continuing to stir. Cover with plastic wrap and chill in the fridge.
- For the tuna patties, drain two cans of tuna, press it with a fork to eliminate any extra moisture, and place in a large mixing bowl.
- Finely chop another clove of garlic and add it to the tuna.
- Dice an onion finely and mix it in with the tuna.
- Remove the seeds from a cayenne chili pepper, chop it roughly, and toss it into the tuna mixture.
- Chop a handful of fresh chives finely and combine with the tuna.
- Flavor the mixture with smoked paprika, sea salt, and ground black pepper, mixing thoroughly.
- In a separate bowl, beat two organic eggs and pour them into the tuna mixture, mixing until everything is well integrated.
- Shape the mixture into small balls, then flatten into patties approximately half an inch thick, placing each on parchment paper. This should yield about 10 patties.
- Warm a nonstick pan over medium heat, adding two tablespoons of extra virgin Spanish olive oil, and let it heat for two minutes.
- Begin cooking the patties in the pan, ensuring not to overcrowd, frying them for two minutes on each side before placing them on a paper towel-lined plate.
- Serve the tuna patties on a dish accompanied by the herbed yogurt dip, garnishing with fresh chives. Enjoy!
