  • 2 tablespoons (30 ml) Extra Virgin Spanish Olive Oil
  • 1/2 cup Greek Yogurt (120g)
  • 1 clove Garlic
  • 1 Lemon

  • to taste Ground Black Pepper
  • 1 tablespoon (15 ml) Extra Virgin Spanish Olive Oil

Instructions

  1. To prepare the herbed yogurt dip, finely chop a clove of garlic and place it in a mortar.
  2. Use a pestle to crush the garlic into a smooth paste, then incorporate the Greek yogurt, seasoning it generously with sea salt, ground black pepper, and the juice of one lemon, stirring until well blended.
  3. Gradually drizzle in a tablespoon of extra virgin Spanish olive oil, continuing to stir. Cover with plastic wrap and chill in the fridge.
  4. For the tuna patties, drain two cans of tuna, press it with a fork to eliminate any extra moisture, and place in a large mixing bowl.
  5. Finely chop another clove of garlic and add it to the tuna.
  6. Dice an onion finely and mix it in with the tuna.
  7. Remove the seeds from a cayenne chili pepper, chop it roughly, and toss it into the tuna mixture.
  8. Chop a handful of fresh chives finely and combine with the tuna.
  9. Flavor the mixture with smoked paprika, sea salt, and ground black pepper, mixing thoroughly.
  10. In a separate bowl, beat two organic eggs and pour them into the tuna mixture, mixing until everything is well integrated.
  11. Shape the mixture into small balls, then flatten into patties approximately half an inch thick, placing each on parchment paper. This should yield about 10 patties.
  12. Warm a nonstick pan over medium heat, adding two tablespoons of extra virgin Spanish olive oil, and let it heat for two minutes.
  13. Begin cooking the patties in the pan, ensuring not to overcrowd, frying them for two minutes on each side before placing them on a paper towel-lined plate.
  14. Serve the tuna patties on a dish accompanied by the herbed yogurt dip, garnishing with fresh chives. Enjoy!
