- 4 boneless skinless chicken breasts
- 2 tsp (10 ml) s oregano or Italian seasoning
- 1 tsp (5 ml) garlic powder
- Sea salt and pepper, to taste
- 1 cup (240 ml) fresh blackberries, very slightly smashed with a fork
- 4 small jalapeno peppers, sliced, most seeds removed
- 4 thick slices moz zarella or provolone cheese
- 2 Tbsp (30 ml) s avocado oil, grass-fed butter, green, unrefined coconut oil, or olive oil
- 1/2 cup (120 ml) chicken bone broth
- Handful of fresh parsley or basil, chopped
Instructions
- Set your oven to 375 degrees Fahrenheit to warm up.
- Coat the chicken breasts thoroughly with oregano, garlic powder, sea salt, and pepper on all sides.
- Cut each chicken breast lengthwise down the center, but stop before cutting all the way through to form a large pocket.
- Fill these pockets evenly with slices of cheese and jalapeno pieces, then use a spoon to add the lightly crushed blackberries.
- Use toothpicks if necessary to keep all the fillings secure.
- Warm your choice of oil in a large skillet that can go in the oven, over medium heat, and sear the chicken until each side is a lovely golden brown, approximately 4 minutes per side.
- Pour the chicken bone broth into the skillet to deglaze and enhance the flavor, then place the skillet in the preheated oven.
- Cook in the oven for 12-15 minutes, or until the chicken reaches an internal temperature of 165°F (73.9°C) as checked with a food thermometer.
- Sprinkle freshly chopped parsley or basil on top before serving.
