Description

A comforting Mexican dish featuring tender beef chuck simmered with roasted green chiles and spices, perfect for family gatherings.


Ingredients

  • 2 pounds beef chuck, cut into chunks
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 46 green chiles (such as Anaheim or Poblano), roasted and peeled
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups beef broth
  • 1 tablespoon olive oil
  • Fresh cilantro, for garnish

Instructions

  1. In a large pot, heat the olive oil over medium-high heat. Add the beef chunks and sear until browned on all sides.
  2. Add the onions and garlic, and sauté until the onions are translucent.
  3. Blend the roasted green chiles with a little beef broth in a blender until smooth.
  4. Add the blended chiles to the pot along with the cumin, oregano, salt, and black pepper. Stir well to combine.
  5. Pour in the remaining beef broth and bring the mixture to a boil.
  6. Reduce heat to low, cover, and simmer for at least 2-3 hours until the beef is tender.
  7. Serve hot, garnished with fresh cilantro. Enjoy with tortillas, rice, or in burritos.

Notes

For a spicier finish, consider adding extra green chiles. Leftovers can be stored in the refrigerator for up to three days.
