Description

Ingredients

  • 1/2 cup mayonnaise
  • 1/2 cup crumbled cotija cheese
  • 1/4 cup chopped fresh cilantro
  • 1 lime, juiced
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat grill to medium-high heat.
  2. Grill the corn for about 2-3 minutes on each side until slightly charred.
  3. In a bowl, mix together mayonnaise, lime juice, chili powder, salt, and pepper.
  4. Once the corn is cooked, spread the mayonnaise mixture over the corn.
  5. Sprinkle crumbled cotija cheese and chopped cilantro on top.
  6. Serve with extra lime wedges on the side.
