Instructions
- Preheat grill to medium-high heat.
- Grill the corn for about 2-3 minutes on each side until slightly charred.
- In a bowl, mix together mayonnaise, lime juice, chili powder, salt, and pepper.
- Once the corn is cooked, spread the mayonnaise mixture over the corn.
- Sprinkle crumbled cotija cheese and chopped cilantro on top.
- Serve with extra lime wedges on the side.
