Ingredients

  • ½ tsp salt
  • ½ tsp chili powder
  • ¼ tsp paprika
  • ½ tsp garlic powder
  • ¼ cup mayonnaise
  • ¼ cup sour cream
  • ¼ tsp chili powder
  • ¼ tsp cumin
  • 12 cloves garlic (finely minced)
  • ¼ tsp salt
  • 2 tsp lime juice
  • ⅓ cup crumbled Cotija cheese

Instructions

  1. Toss the cauliflower florets in the olive oil, salt, chili powder, paprika, and garlic powder until well coated.
  2. Place the florets directly on the grill grate for about 10-15 minutes, turning occasionally until they are tender and charred.
  3. In a small bowl, mix together the mayonnaise, sour cream, additional chili powder, cumin, minced garlic, salt, and lime juice until smooth to make the crema.
  4. Once the cauliflower is grilled, transfer it to a serving plate. Drizzle generously with the crema and top with crumbled Cotija cheese.
