Description

A comforting casserole combining crunchy tortilla chips, seasoned beef, and gooey cheese, perfect for family gatherings.


Ingredients

  • 1 pound ground beef
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 package taco seasoning
  • 1 cup sour cream
  • 2 cups shredded cheese (cheddar or a Mexican blend)
  • 1 bag tortilla chips
  • 2 tablespoons chopped green onions (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef over medium heat, draining any excess fat.
  3. Add taco seasoning, black beans, corn, and diced tomatoes; warm through for about five minutes.
  4. In a large baking dish, layer half of the tortilla chips on the bottom.
  5. Spoon half of the beef mixture over the chips, followed by half of the sour cream dolloped on top.
  6. Sprinkle half of the cheese over everything.
  7. Repeat the layering process with remaining chips, beef mixture, sour cream, and cheese.
  8. Bake in the preheated oven for 20-25 minutes until cheese is bubbly and golden.
  9. Remove from oven and let cool for a few minutes, then sprinkle with chopped green onions before serving.

Notes

For extra crunch, leave some chips unbroken on top. Use lower fat sour cream or Greek yogurt for a lighter version.
