- 1 pound ground beef
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes with green chilies
- 1 package taco seasoning
- 1 cup sour cream
- 2 cups shredded cheese (cheddar or a Mexican blend)
- 1 bag tortilla chips
- 2 tablespoons chopped green onions (for garnish)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, brown the ground beef over medium heat, draining any excess fat.
- Add taco seasoning, black beans, corn, and diced tomatoes; warm through for about five minutes.
- In a large baking dish, layer half of the tortilla chips on the bottom.
- Spoon half of the beef mixture over the chips, followed by half of the sour cream dolloped on top.
- Sprinkle half of the cheese over everything.
- Repeat the layering process with remaining chips, beef mixture, sour cream, and cheese.
- Bake in the preheated oven for 20-25 minutes until cheese is bubbly and golden.
- Remove from oven and let cool for a few minutes, then sprinkle with chopped green onions before serving.
Notes
For extra crunch, leave some chips unbroken on top. Use lower fat sour cream or Greek yogurt for a lighter version.
