Ingredients

  • 1 pound ground beef (85% lean)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon taco seasoning
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) corn kernels, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 2 cups crushed tortilla chips, divided
  • 2 cups shredded Mexican cheese blend, divided
  • 1 can (10 oz) red enchilada sauce
  • 1/2 cup sour cream
  • 1/4 cup fresh cilantro, chopped
  • 1 avocado, sliced

Instructions

  1. Preheat oven to 375°F and grease a 9×13-inch baking dish.
  2. Brown ground beef in a large skillet over medium-high heat (5-7 minutes).
  3. Add onion and cook until translucent (3-4 minutes).
  4. Add garlic and taco seasoning, cook for 30 seconds.
  5. Combine meat mixture with beans, corn, and tomatoes.
  6. Layer half the meat mixture, 1 cup tortilla chips, half the enchilada sauce, and 1 cup cheese.
  7. Add remaining meat, sour cream, sauce, chips, and cheese.
  8. Cover with foil, bake 20 minutes, then uncover and bake 10-15 minutes more.
  9. Rest 5-10 minutes before serving with cilantro and avocado.

  • Can substitute ground turkey for beef
  • Make ahead and freeze for up to 3 months
