- 1 pound ground beef (85% lean)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tablespoon taco seasoning
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (15 oz) corn kernels, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 2 cups crushed tortilla chips, divided
- 2 cups shredded Mexican cheese blend, divided
- 1 can (10 oz) red enchilada sauce
- 1/2 cup sour cream
- 1/4 cup fresh cilantro, chopped
- 1 avocado, sliced
Instructions
- Preheat oven to 375°F and grease a 9×13-inch baking dish.
- Brown ground beef in a large skillet over medium-high heat (5-7 minutes).
- Add onion and cook until translucent (3-4 minutes).
- Add garlic and taco seasoning, cook for 30 seconds.
- Combine meat mixture with beans, corn, and tomatoes.
- Layer half the meat mixture, 1 cup tortilla chips, half the enchilada sauce, and 1 cup cheese.
- Add remaining meat, sour cream, sauce, chips, and cheese.
- Cover with foil, bake 20 minutes, then uncover and bake 10-15 minutes more.
- Rest 5-10 minutes before serving with cilantro and avocado.
Notes
- Can substitute ground turkey for beef
- Make ahead and freeze for up to 3 months
- Drain excess fat from meat for best results
- Grate your own cheese for better melting
- Allow to rest before serving for proper setting
