A flavorful Mexican White Trash Casserole combining ground beef, beans, corn, and Mexican spices topped with layers of cheese and tortilla chips – perfect for family dinners.

- 1 pound lean ground beef (90/10)
- 1 medium onion, finely diced
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn kernels, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 package (1.25 oz) taco seasoning
- 2 cups tortilla chips, slightly crushed
- 2 cups shredded Mexican cheese blend
- 1 cup sour cream
- ¼ cup fresh cilantro, chopped
- 1 teaspoon ground cumin
- ½ teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
- Brown ground beef in a large skillet, drain excess fat.
- Sauté onions and garlic until translucent.
- Add bell peppers and seasonings, cook until softened.
- Mix in beans, corn, and tomatoes. Simmer for 5 minutes.
- Layer half the meat mixture in baking dish.
- Add layers of tortilla chips, cheese, and sour cream.
- Top with remaining meat mixture, chips, and cheese.
- Cover with foil, bake 20 minutes.
- Remove foil, bake additional 10-15 minutes until cheese is bubbly.
Notes
- Can substitute ground turkey for beef
- Make ahead and refrigerate for up to 24 hours before baking
- Freeze assembled casserole for up to 3 months
- Add jalapeños for extra heat
- Serve with fresh avocado and lime wedges
