Ingredients

  • 6 hard-boiled eggs
  • 4 slices of bacon
  • 1/4 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon white vinegar
  • Salt and pepper to taste
  • Chopped chives for garnish

Instructions

  1. Hard boil the eggs and let them cool.
  2. Once cooled, peel the eggs and slice them in half, removing the yolks.
  3. In a mixing bowl, mash the yolks and combine with mayonnaise, Dijon mustard, white vinegar, salt, and pepper.
  4. Cook the bacon until crispy, then crumble it into the yolk mixture.
  5. Mix until well combined.
  6. Spoon or pipe the mixture back into the egg whites.
  7. Garnish with chopped chives and additional bacon if desired.
  8. Serve chilled.
