- 6 hard-boiled eggs
- 4 slices of bacon
- 1/4 cup mayonnaise
- 1 teaspoon Dijon mustard
- 1 teaspoon white vinegar
- Salt and pepper to taste
- Chopped chives for garnish
Instructions
- Hard boil the eggs and let them cool.
- Once cooled, peel the eggs and slice them in half, removing the yolks.
- In a mixing bowl, mash the yolks and combine with mayonnaise, Dijon mustard, white vinegar, salt, and pepper.
- Cook the bacon until crispy, then crumble it into the yolk mixture.
- Mix until well combined.
- Spoon or pipe the mixture back into the egg whites.
- Garnish with chopped chives and additional bacon if desired.
- Serve chilled.
