- 4 ounces cream cheese
- 6 ounces salted butter (at room temperature)
- 48 grams (1/4 cup) shortening
- 455 grams (3 1/2 cups) powdered sugar
- (Optional) 1 tablespoon Instant Clearjel
- 1 tablespoon pure vanilla extract
- (Optional) 1/4 teaspoon almond extract
- 42 grams (1/4 cup) white chocolate chips
- 42 grams (1/4 cup) “Bright White” or “Super White” candy melts
- 2 tablespoons heavy cream
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour your cake pans.
- In a mixing bowl, combine all dry ingredients: flour, Clearjel or pudding mix, baking powder, baking soda, and salt. Whisk to combine and set aside.
- In another bowl, cream the room-temperature butter and sugar until light and fluffy.
- Beat in the large egg and egg whites one at a time, including vanilla and almond extracts.
- In small increments, add the dry ingredients to the creamed butter, alternating with buttermilk, water, and vinegar until fully combined.
- Pour the batter into the prepared pans, smoothing the tops with a spatula.
- Bake in the preheated oven for approximately 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Allow the cakes to cool completely before turning them out onto a wire rack.
Notes
Consider adding additional almond extract for enhanced flavor. Chill layers after baking for more stable frosting application.
