Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut each spaghetti squash in half lengthwise and remove the seeds.
  3. Brush the cut sides of the squash with 1 tablespoon of olive oil.
  4. Place the squash halves cut-side down on a baking sheet.
  5. Roast in the oven for 35-40 minutes until tender.
  6. Allow the squash to cool slightly before handling.
  7. Use a fork to scrape the squash flesh into strands and set aside.
  8. In a large skillet, heat the remaining 1 tablespoon of olive oil over medium heat.

  11. Stir in the spaghetti squash strands, mixing well.
  12. Add the grated Parmesan cheese, salt, black pepper, and dried Italian herbs.
