Instructions
- Preheat the oven to 400°F (200°C).
- Cut each spaghetti squash in half lengthwise and remove the seeds.
- Brush the cut sides of the squash with 1 tablespoon of olive oil.
- Place the squash halves cut-side down on a baking sheet.
- Roast in the oven for 35-40 minutes until tender.
- Allow the squash to cool slightly before handling.
- Use a fork to scrape the squash flesh into strands and set aside.
- In a large skillet, heat the remaining 1 tablespoon of olive oil over medium heat.
- Add the minced garlic to the skillet and sauté for 1-2 minutes until fragrant.
- Add the fresh spinach to the skillet and cook, stirring, until wilted.
- Stir in the spaghetti squash strands, mixing well.
- Add the grated Parmesan cheese, salt, black pepper, and dried Italian herbs.
- Toss everything together until well combined and heated through.
- Remove from heat and sprinkle with chopped fresh parsley.
- Serve warm as a flavorful side or main dish.
