Instructions

  1. Prepare the cookie dough: In a mixing bowl, combine flour, baking soda, and baking powder. In a separate bowl, cream the softened butter with the sugar until it becomes fluffy. Then add the egg and vanilla extract, mixing until incorporated. Gradually combine the dry ingredients with the wet ingredients to form a dough.
  2. Bake the cookie cups: Shape small balls of cookie dough, roughly 1 tablespoon in size. Place the balls into the greased mini muffin tin, spacing them appropriately. Bake in the preheated oven until golden, around 10-12 minutes. As soon as they come out, use the back of a small spoon to press down in the center of each cookie ball, forming a cup. Allow them to cool completely in the tin.
  3. Make the lemon curd: In a clean mixing bowl, cream 6 tablespoons of softened butter with 1 cup of sugar until light and fluffy. Whisk in the two whole eggs and the two yolks, blending well. Gradually add the lemon juice, incorporating it into the mixture. Cook this over medium heat, stirring constantly until the curd thickens and retains a pudding-like consistency.
  4. Assemble: Fill each cooled cookie cup with the lemon curd, then place them in the refrigerator to chill for at least one hour. Before serving, garnish the tops with lemon zest and a sprinkle of powdered sugar for a delightful presentation.
