  • 2 tablespoons vegetable oil (30 ml)
  • 1 1/2 pounds (680 g) cremini mushrooms, cleaned, trimmed, and roughly chopped (about 6 cups)
  • 1 yellow or red onion, roughly chopped (about 2 cups (480 ml))
  • Salt and black pepper
  • 6 garlic cloves, roughly chopped
  • 1 pound (454 g) short pasta, such as rigatoni, penne, or cavatappi
  • 1 cup (240 ml) full-fat cottage cheese, plus more for serving
  • 1/2 lemon
  • 1 teaspoon (5 ml) red-pepper flakes (or to taste)
  • Handful of parsley leaves, finely chopped

Instructions

  1. Warm a sizable pan over medium-high heat and pour in the vegetable oil. Drop in the mushrooms, onion, a teaspoon of salt, and a generous sprinkle of black pepper. Stir now and then, letting the mushrooms release some of their moisture for 4 to 5 minutes. Add garlic and stir for an additional 7 to 8 minutes until the mushrooms are fully tender and have a golden hue, and the liquid has evaporated. Turn off the burner.
  2. Simultaneously, bring a big pot of salted water to a rolling boil, and cook the pasta following the instructions on the package. Keep aside 3 cups of the pasta water before draining the pasta. Place the drained pasta back into the pot.
  3. Move the cooked mushroom mixture into a blender or food processor, and pour in 2 cups of the reserved pasta water. (Keep the extra water in case you need to adjust the sauce’s consistency.) Blend until smooth. Taste and adjust with more salt and pepper, if necessary.
  4. Drizzle the mushroom sauce over the pasta, add the cottage cheese, and mix until the pasta is fully coated.
  5. For serving, squeeze some lemon juice over the top, then sprinkle with red-pepper flakes and chopped parsley. Add another spoonful of cottage cheese, if desired.
