Ingredients

  • 1 block of firm tofu, cubed
  • 8 ounces of mushrooms, sliced
  • 2 tablespoons of soy sauce
  • 1 tablespoon of olive oil
  • 2 cloves of garlic, minced
  • 1 tablespoon of ginger, minced
  • Vegetables of choice (e.g., bell peppers, broccoli, snow peas)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add cubed tofu and cook until crisp and golden, about 5-7 minutes.
  3. Introduce mushrooms and chosen vegetables to the pan, and sauté for an additional 3-5 minutes.
  4. Stir in garlic and ginger, cooking until fragrant, about 1 minute.
  5. Add soy sauce, and stir to combine.
  6. Season with salt and pepper to taste, then serve hot.

Notes
