Description

A delightful no-bake cheesecake parfait that captures the creamy richness of cheesecake with layers of buttery graham crackers and sweet cherry topping.


Ingredients

  • 1 1/2 cups finely crushed graham cracker crumbs
  • 3 tablespoons granulated sugar
  • 7 tablespoons butter, melted
  • 1 8-ounce package cream cheese, softened
  • 1 14-ounce can sweetened condensed milk
  • 1/3 cup freshly squeezed lemon juice
  • 1 teaspoon vanilla extract
  • 1 21-ounce can cherry pie filling

Instructions

  1. Combine the finely crushed graham cracker crumbs, granulated sugar, and melted butter in a small mixing bowl. Set aside.
  2. Beat the softened cream cheese in a medium mixing bowl with an electric mixer until smooth and creamy. Gradually add the sweetened condensed milk while mixing until fully combined.
  3. Pour the freshly squeezed lemon juice and vanilla extract into the cream cheese mixture and stir to incorporate.
  4. Position six plastic, 9-ounce punch cups on your counter or a cookie sheet. Scoop two tablespoons of the graham cracker crumb mixture into the bottom of each cup, pressing it down lightly.
  5. Layer three tablespoons of the cheesecake mixture into each cup, spreading it out evenly.
  6. Distribute half of the cherry pie filling between the six cups, reserving the other half for later.
  7. Sprinkle two tablespoons of the graham cracker crumb mixture over the cherry layer in each cup.
  8. Divide the remaining cheesecake mixture between the six cups, spreading it evenly on top of the graham cracker layer.
  9. Top each parfait with the reserved cherry pie filling and a sprinkle of graham cracker crumbs for presentation.
  10. Serve immediately, or chill for up to 24 hours before serving.

Notes

For added flair, consider garnishing with fresh cherries or lemon zest before serving.
