- 1 1/2 cups finely crushed graham cracker crumbs
- 3 tablespoons granulated sugar
- 7 tablespoons butter, melted
- 1 8-ounce package cream cheese, softened
- 1 14-ounce can sweetened condensed milk
- 1/3 cup freshly squeezed lemon juice
- 1 teaspoon vanilla extract
- 1 21-ounce can cherry pie filling
Instructions
- Combine the finely crushed graham cracker crumbs, granulated sugar, and melted butter in a small mixing bowl. Set aside.
- Beat the softened cream cheese in a medium mixing bowl with an electric mixer until smooth and creamy. Gradually add the sweetened condensed milk while mixing until fully combined.
- Pour the freshly squeezed lemon juice and vanilla extract into the cream cheese mixture and stir to incorporate.
- Position six plastic, 9-ounce punch cups on your counter or a cookie sheet. Scoop two tablespoons of the graham cracker crumb mixture into the bottom of each cup, pressing it down lightly.
- Layer three tablespoons of the cheesecake mixture into each cup, spreading it out evenly.
- Distribute half of the cherry pie filling between the six cups, reserving the other half for later.
- Sprinkle two tablespoons of the graham cracker crumb mixture over the cherry layer in each cup.
- Divide the remaining cheesecake mixture between the six cups, spreading it evenly on top of the graham cracker layer.
- Top each parfait with the reserved cherry pie filling and a sprinkle of graham cracker crumbs for presentation.
- Serve immediately, or chill for up to 24 hours before serving.
Notes
For added flair, consider garnishing with fresh cherries or lemon zest before serving.
