Description

A comforting noodle soup with a rich tomato base, perfect for chilly nights or busy weeknights.


Ingredients

  • 1 (28-ounce) can whole tomatoes
  • 1/4 cup + 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh Mexican oregano, chopped
  • 1 teaspoon kosher salt
  • 1 teaspoon ground cumin
  • 1 (7-ounce) package cut fideo pasta
  • 1 quart chicken broth or vegetable broth
  • 1/3 cup chopped cilantro

Instructions

  1. Combine the whole tomatoes, 1/4 cup of olive oil, minced garlic, oregano, salt, and cumin in a blender. Blend on high until smooth.
  2. In a large soup pot, heat the remaining 3 tablespoons of olive oil over medium heat. Add the fideo pasta and stir frequently until golden, about 4 minutes.
  3. Pour the tomato base into the pot and fry it in the oil for 1-2 minutes.
  4. Add the chicken or vegetable broth and bring to a boil. Reduce heat to low, cover, and let simmer for about 5 minutes until noodles are cooked.
  5. Stir in fresh chopped cilantro before serving.

Notes

Consider adding vegetables like bell peppers or zucchini for added nutrition and texture. You can also experiment with herbs to enhance flavors.
