Ingredients

- 1 (28-ounce) can whole tomatoes
- 1/4 cup + 3 tablespoons olive oil
- 2 cloves garlic, minced
- 1 tablespoon fresh Mexican oregano, chopped
- 1 teaspoon kosher salt
- 1 teaspoon ground cumin
- 1 (7-ounce) package cut fideo pasta
- 1 quart chicken broth or vegetable broth
- 1/3 cup chopped cilantro
Instructions
- Combine the whole tomatoes, 1/4 cup of olive oil, minced garlic, oregano, salt, and cumin in a blender. Blend on high until smooth.
- In a large soup pot, heat the remaining 3 tablespoons of olive oil over medium heat. Add the fideo pasta and stir frequently until golden, about 4 minutes.
- Pour the tomato base into the pot and fry it in the oil for 1-2 minutes.
- Add the chicken or vegetable broth and bring to a boil. Reduce heat to low, cover, and let simmer for about 5 minutes until noodles are cooked.
- Stir in fresh chopped cilantro before serving.
Notes
Consider adding vegetables like bell peppers or zucchini for added nutrition and texture. You can also experiment with herbs to enhance flavors.
