Ingredients

- 2 cups rolled oats
- 1 cup protein powder
- 1/2 cup mashed banana or unsweetened applesauce
- 1/2 cup almond milk or water
- 1/4 cup honey or maple syrup (optional, for sweetness)
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- Pinch of salt
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine rolled oats, protein powder, baking soda, cinnamon, and salt.
- In another bowl, mix together mashed banana (or applesauce), almond milk, honey or maple syrup (if using), and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until well combined.
- Drop tablespoon-sized amounts of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the cookies are lightly golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
