- 4 boneless, skinless chicken breasts
- 1 cup balsamic vinegar
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 cup cherry tomatoes, halved
- 1 cup spinach leaves
- Fresh basil for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Whisk together balsamic vinegar, olive oil, minced garlic, salt, and pepper in a bowl.
- Place chicken breasts in a baking dish and pour the balsamic mixture over them.
- Add cherry tomatoes around the chicken.
- Bake for 25-30 minutes, or until the chicken is cooked through.
- In the last 5 minutes of cooking, add spinach on top of the chicken.
- Remove from the oven and garnish with fresh basil before serving.
Notes
Marinating the chicken in the balsamic mixture for a few hours before baking deepens the flavor. Use a meat thermometer to ensure chicken reaches 165°F (74°C) for safety.
