Description

Ingredients

  • 1 whole chicken or chicken pieces
  • 4 cups chicken broth
  • 2 cups carrots, sliced
  • 2 cups celery, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, sauté the onion and garlic until translucent.
  2. Add the chicken pieces and brown them slightly.
  3. Pour in the chicken broth and add carrots, celery, thyme, salt, and pepper.
  4. Bring to a boil, then reduce heat and let simmer until the chicken is cooked through.
  5. Remove the chicken, shred the meat, and return to the pot.
  6. Stir in the lemon juice and adjust seasoning.
  7. Serve hot, garnished with fresh parsley.
