- 1 whole chicken or chicken pieces
- 4 cups chicken broth
- 2 cups carrots, sliced
- 2 cups celery, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon thyme
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, sauté the onion and garlic until translucent.
- Add the chicken pieces and brown them slightly.
- Pour in the chicken broth and add carrots, celery, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and let simmer until the chicken is cooked through.
- Remove the chicken, shred the meat, and return to the pot.
- Stir in the lemon juice and adjust seasoning.
- Serve hot, garnished with fresh parsley.
