  • 1 tablespoon olive oil (15 ml)
  • 1 cup (240 ml) finely diced yellow onion (1 large onion)
  • 1 cup (240 ml) finely diced red pepper (1 large pepper)
  • 1 tablespoon (15 ml) finely minced garlic, about 3-4 cloves
  • 2 cups (480 ml) peeled and chopped sweet potatoes (1 large or 23 medium/small)
  • 1 pound (454 g) lean ground beef, or ground turkey
  • 2 to 3 tablespoons (38 ml) chili powder, use less, if you’re sensitive to heat
  • 2 teaspoons (10 ml) ground cumin
  • 1 teaspoon (5 ml) EACH: smoked paprika (or regular), dried oregano, beef bouillon powder
  • 3/4 teaspoon (4 ml) fine sea salt
  • 1/2 teaspoon (3 ml) EACH: onion powder, freshly cracked pepper
  • 1/4 teaspoon (1 ml) garlic powder
  • 1/4 teaspoon (1 ml) cayenne pepper, optional (add if you like heat!)
  • 2 tablespoons (30 ml) tomato paste
  • 2 (14.5 oz (411 g).) cans fire-roasted crushed tomatoes
  • 1 (15.25 oz (432 g).) can black beans, drained and rinsed
  • 1 (16 oz (454 g).) can chili beans in mild sauce, don’t drain or rinse these beans; the sauce they’re in add loads of flavor
  • 1 cup (240 ml) frozen corn
  • 1 cup (240 ml) chicken stock or broth
  • Toppings of choice: freshly grated sharp cheddar, sour cream, fresh cilantro, lime, crushed chips/crackers, ripe avocado

Instructions

  1. Warm up some olive oil in a large pot on medium-high heat. When the oil begins to shimmer, toss in the onion and red pepper. Stir frequently for about 5 minutes until the onion turns see-through. Introduce the garlic and mix for 30 seconds until you can smell its aroma. Lower the heat to medium, add the sweet potatoes, and stir from time to time for 7-9 minutes. If things start to burn or brown too much, turn the heat down a bit.
  2. Push the veggies to one side of the pot and place the ground beef in the middle. Turn the heat up to medium-high, breaking the meat apart as it cooks, until it’s brown on the outside, roughly 5 minutes. Blend the veggies back in with the meat as you go. If there’s any excess liquid, drain it off.
  3. Introduce all the spices and tomato paste, stirring continuously for 2 minutes until they release their fragrance. Pour in the crushed tomatoes and keep stirring for an additional minute. Mix in the drained black beans, the chili beans without draining, the frozen corn, and the chicken stock. Stir everything together and let it come to a boil, then lower the heat and let it simmer, covered, for 30-45 minutes until the chili thickens and the sweet potato pieces soften. Stir occasionally during this time.
  4. Take the pot off the heat. Adjust the seasoning with more salt or pepper if needed. I like to add a few tablespoons of lime juice and sprinkle about 1/4 cup of chopped cilantro at this point.
  5. Add your chosen toppings to individual servings. We typically garnish ours with a generous amount of freshly grated sharp cheddar cheese, another squeeze of lime, a hearty spoonful of sour cream, and some chopped cilantro. Don’t skip the toppings; they really enhance the dish!

Notes

  • For a healthier option, use lean ground turkey instead of beef to reduce fat content without losing flavor.
  • For a milder chili, start with a smaller amount of chili powder and cayenne pepper, adjusting to taste as it cooks.
  • Save time by using pre-chopped frozen onions and peppers instead of dicing them yourself.
