This one pot lasagna soup combines the comforting flavors of traditional lasagna into a hearty, slurpable dish, made effortlessly in one pot.
Ingredients

- 24 ounces of tomato sauce
- 32 ounces of chicken broth
- 1 pound of ground beef
- 9 ounces of gluten-free lasagna noodles
- 4–6 cups of baby spinach
- 2 cups of filtered water
- 1 sweet onion, chopped
- 1 tablespoon of olive oil
- 1 teaspoon of salt
- 1/2 teaspoon of dried basil
- 1/2 teaspoon of dried oregano
Instructions
- Sauté the sweet onion with the olive oil in a large pot until fragrant and translucent.
- Add the ground beef along with dried basil, oregano, and salt. Cook until the meat is about 90% cooked through.
- Add in the chicken broth, tomato sauce, filtered water, and the uncooked lasagna noodles, which you may break into smaller pieces if desired.
- Cover the pot and let the mixture simmer for about 15 minutes.
- Uncover the pot, stir in the baby spinach, and let it simmer for an additional 15 minutes.
- Serve hot and enjoy!
Notes
For added texture and nutrition, feel free to incorporate other vegetables like zucchini or bell peppers. Ensure noodles are tender but not overcooked for the best results.
