Description

Miniature Oreo cheesecake bites that are creamy, rich, and perfect for any occasion.


Ingredients

  • 16 Oreos (for the bases and crumbs)
  • 16 ounces cream cheese, softened (two 8-ounce packages)
  • 1/2 cup sugar
  • 2 whole eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup large and small Oreo cookie crumbs (reserved a few tablespoons for topping)

Instructions

  1. Preheat your oven to 350°F.
  2. Line a cupcake baking pan with 16 paper liners and place one Oreo cookie at the bottom of each.
  3. Beat together the softened cream cheese, sugar, eggs, and vanilla extract for about 2-3 minutes until smooth.
  4. Fold in the reserved Oreo cookie crumbs gently into the cream cheese mixture.
  5. Spoon approximately two tablespoons of the cheesecake mixture into each cupcake liner.
  6. Sprinkle the tops with additional Oreo crumbs.
  7. Bake for 14-16 minutes until set but slightly jiggly in the center.
  8. Cool for at least 30 minutes, then refrigerate for about two hours before serving.
