- 16 Oreos (for the bases and crumbs)
- 16 ounces cream cheese, softened (two 8-ounce packages)
- 1/2 cup sugar
- 2 whole eggs
- 1 teaspoon vanilla extract
- 3/4 cup large and small Oreo cookie crumbs (reserved a few tablespoons for topping)
Instructions
- Preheat your oven to 350°F.
- Line a cupcake baking pan with 16 paper liners and place one Oreo cookie at the bottom of each.
- Beat together the softened cream cheese, sugar, eggs, and vanilla extract for about 2-3 minutes until smooth.
- Fold in the reserved Oreo cookie crumbs gently into the cream cheese mixture.
- Spoon approximately two tablespoons of the cheesecake mixture into each cupcake liner.
- Sprinkle the tops with additional Oreo crumbs.
- Bake for 14-16 minutes until set but slightly jiggly in the center.
- Cool for at least 30 minutes, then refrigerate for about two hours before serving.
