A creamy and comforting potato soup inspired by Outback Steakhouse, featuring rich flavors of potatoes, cheddar cheese, and crispy bacon.

- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup sharp cheddar cheese, shredded
- 6 slices bacon, cooked and crumbled
- Salt and pepper to taste
- Green onions, chopped for garnish
Instructions
- In a large pot, cook the bacon until crispy. Remove and set aside, leaving the drippings in the pot.
- Add the chopped onion and garlic to the pot and sauté until softened.
- Stir in the diced potatoes and chicken broth. Bring to a boil, then reduce to a simmer and cook until the potatoes are tender, about 15-20 minutes.
- Use a potato masher or immersion blender to mash some of the potatoes for a creamy texture.
- Stir in the heavy cream and cheddar cheese until melted and smooth.
- Season with salt and pepper to taste.
- Serve hot, topped with crumbled bacon and chopped green onions.
Notes
For a thicker consistency, mash more potatoes or add more chicken broth for a thinner soup. Experiment with different cheeses for added flavor.
