Description

A creamy and comforting potato soup inspired by Outback Steakhouse, featuring rich flavors of potatoes, cheddar cheese, and crispy bacon.


Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup sharp cheddar cheese, shredded
  • 6 slices bacon, cooked and crumbled
  • Salt and pepper to taste
  • Green onions, chopped for garnish

Instructions

  1. In a large pot, cook the bacon until crispy. Remove and set aside, leaving the drippings in the pot.
  2. Add the chopped onion and garlic to the pot and sauté until softened.
  3. Stir in the diced potatoes and chicken broth. Bring to a boil, then reduce to a simmer and cook until the potatoes are tender, about 15-20 minutes.
  4. Use a potato masher or immersion blender to mash some of the potatoes for a creamy texture.
  5. Stir in the heavy cream and cheddar cheese until melted and smooth.
  6. Season with salt and pepper to taste.
  7. Serve hot, topped with crumbled bacon and chopped green onions.

Notes

For a thicker consistency, mash more potatoes or add more chicken broth for a thinner soup. Experiment with different cheeses for added flavor.
